Soil Composition: soil sandy loam, calcareous
Vinification and maturation: Light whole grape pressing, must is fermented as it was a white wine, in stainless steel vat at 15° C temperature-controlled. Wine remains on fine sediments in steel until spring. First fermentation in bottle in June. First early degorgement in November. Both operation are hand made, without wine-making machines.
Alcohol: 12.5% vol.
Service: serve at 9° – 10° C
Gastronomy: Perfect with appetizers, fish courses, highly recommended with crustaceans. Perfect also for a toast paired with a dessert.
Colour: White gold
Perfume: First sensation of yellow flowers, peaches, spicy. Noble scent of butter, bread crust and honey make this sparkling wine a handmade product of high quality.
Taste: Ample, fragrant taste. Amply satisfies with its fine and dense perlage. Very pleasant acidity, completes the sensations with flowered and fruity notes.
