Vine varieties: 100% Pinot Noir

Cultivation form: Guyot

Soil Composition: Sandy-loam, calcareous soil.

Harvest: Last week of August, First week of September.

 

In Cantina

Vinification: Grapes are stemmed and the must with the skins is placed to ferment in steel vats.

During the fermentation the temperature is kept below 26°C ,to prevent  yeasts going on stress.

A short maceration on the skins follows, increasing its complexity.

Aging: Steel tanks and concrete tanks, to preserve the aromatic elegance of the product

Alcohol content: 13.5% vol.

Service Mode: 19°C.

In Tavola

Gastronomy: Goes well with game such as; wild boar, deer, duck. Also recommended with mushroom risottos and typically mountain area recipes. It also goes perfectly with semi-mature cheeses and warm, tasty fish soups.

Color: Garnet red, intense and clear.

Perfume: Complex, elegant and subtle. It opens in the glass giving floral and balsamic notes, with a   distinctive note of pepper.

Taste: Elegant structure. The tannin is challenging, but not bitter, it is a sweet and well-present note, perfect for an excellent wine with long aging in the bottle. Notes of pepper and balsamic also stand out in the mouth, making it an extremely complex wine with a very long persistence, thanks also to the acidity, perfectly balanced by the alcohol content.
